Ribbon Cutting - Varick Street 35th Anniversary & Stiefvater Room Remodel

Description
In the spring of 1987 Steve Klosek along with two partners bought the Stiefvater building at 618-622 Varick Street to remodel into apartments. In the fall of the same year, Steve and his partners bought the neighboring bar, the Varick Bar and Grill. The newly remodeled Varick Bar and Grill was opened on March 1, 1988.
In 1989 Steve bought out his two business partners, and his then girlfriend, soon to be wife, Michelle Klosek, became Steve’s business partner.
In the fall of 2003 the couple eventually opened a martini bar , the Stiefvater Room at 618 Varick St., right next door to the Varick Bar and Grill. In 2006 the couple again purchased the adjacent building and land at 624-628 Varick St., Utica NY. They had built what is now Sickenberger Lane, an indoor/outdoor seasonal tavern. The Klosek’s daughters, Dr. Stephanie Klosek and Taylor Klosek were very involved in all aspects of the taverns.
On January 1st, 2022 the Klosek’s decided to close the Stiefvater Room for a 1920’s style remodel. The lead designers were Stiefvater staff members Brenden Boucher and Isabella Fasolo. The redesign took three weeks and it came with an updated specialty drink menu. The remodel has been well received by the Stiefvater room patrons.
